Sticky Toffee Cake

I was asked to make a special 40th birthday cake for my best friends husband.

This is exactly the kind of order I love getting, working with delicious flavours rather than some novelty idea.

Originally it was going to to one of my salted caramel cakes, always a popular choice, but out on one of our running sessions she mentioned sticky toffee pudding was his absolute favourite pudding and wondered if I could transform it into a cake.

This is exactly the kind of order I love getting, working with delicious flavours rather than some novelty idea. I'd much rather a cake be about the taste than its looks, after all, it is going to be eaten. So inside this incredibly tasty cake are layers of sticky date and walnut cake, a layer of my classic salted caramel in the centre, then filled and covered with caramel cream cheese frosting with more caramel poured on top.

To make it an extra special cake it's decorated with Caramac shards with caramelised pecans, crushed toffee and a bit of edible gold confetti. It went down a real treat, I know it was thoroughly enjoyed.

I've always loved sticky toffee pudding, so to have a birthday cake made from it was amazing. The texture and mix of flavours were bliss, it was amazing! Jonathan Thomas
