Chai Spiced Apple Brown Sugar Cake

This weeks cake was about having some time to play about, new flavours and a different style of decorating that I've been wanting to try for a while now.

I have a big cake crush on Suzanne Brady's beautiful creations at cove cake designs. Not only are her cakes stunning down to the tiniest detail but I love her creative flavour combinations, they always sound so delicious. I love that Suzanne's cakes aren't just about how beautiful they look but also about the cake underneath the icing. After seeing her most recent blog post I had to try out one of her recipes, I had a quieter week this week with it being half term so it was the perfect opportunity to just experiment. I don't get much time to bake for fun these days.

I'm so glad I tried this recipe, it's easy to follow and the flavour combinations make it something really special.

It's a perfect cake for this time of year, apple and blackberries always make me think of Autumn, and with the warming spices from the chai tea and the toasty taste from the browned butter it's just stunning. I've been lusting over the finish on semi naked cakes for quite some time, especially Suzanne's, they are so pretty, somewhere between rustic and total perfection. It wasn't as tricky as I thought though I'd like a little more cake peeking through the icing – but for a first attempt I'm really pleased.

I think there are going to be a lot more semi naked cakes to follow.
