Bakewell Tart

The Great British Bake Off 2015, Week 6 – Pastry.

Last week on The Great British Bake Off was pastry and the signature bake featured frangipan tarts with a sweet short crust pastry base.

This is one of my favourite weeks, I love making pastry and I love eating it. I just had to make a Bakewell tart, it's the best use of frangipan in my opinion.

A couple of years back I would have said it was my signature bake I used to make it so often, I've tried so many different versions and flavour combinations but you can't beat a classic and I always go back to my original recipe.

My love of Bakewell come from my childhood, it was one of my mums regular bakes so I've grown up eating it from a young age. I feel I've become quite a Bakewell connoisseur over the years, but this means every time I see it on a menu and order it I'm generally disappointed. They are either too cakey, too dry or not almondy enough. Nothing compares to mine or my mums bakes, I've been spoilt by good baking over the years.

It takes a lot to impress my tastebuds but this recipe however ticks all the boxes.
